Description
Whole Wheat and Flax Seed Banana Bread or Muffins! That's the whole title. You can also add some Pumpkin Spice to add some extra goodness to it.
1 cup whole wheat flour
¼ cup all-purpose flour
¾ cup ground flaxseed
2/3 cup white sugar
2 tsp. baking powder
¼ tsp. salt
2 eggs
¼ cup milk
¼ cup olive oil
1 cup mashed bananas
½ tsp. vanilla extract
1 or 2 cups of Chocolate Chips
Preheat oven to 350F. Grease a loaf pan.
Sift flours, flax, sugar, baking powder and salt into a large bowl.
In another bowl, mash the bananas. Beat in eggs, milk, oil,chocolate chips and vanilla. Stir into dry ingredients until moistened. Pour into loaf pan or into a muffin tin
If using the loaf pan - Bake for 50-55 minutes.
If using the muffin tin - bake for 16 minutes.
Time may vary for size of pans
